Levain
Feed the starter, time the rise, weigh the loaf — one sourdough log
Log every feeding with its ratio, hydration and kitchen temperature; start a rise timer at the jar and mark the peak to build your culture's own baseline; turn flour weight and baker's percentages into exact gram weights; and keep every bake with its schedule, rating and formula. Free, offline, no account.

What you can do in Levain on the web
A feeding log with a freshness clock
Flour, water and old-starter grams give you the ratio (1:5:5) and hydration automatically, and the home screen shows hours since the last feed colour-coded green under 12 h, amber to 24 h, red beyond.
Rise timer with a peak marker
Start the timer at the feeding, tap when the dome is at its highest, and Levain records the minutes to peak — then charts your last ten rises so you learn how the culture behaves as the kitchen warms and cools.
Hydration calculator
Set the flour weight and the hydration, salt and starter percentages and get grams for each, a total dough weight, and a proportion bar — with six common formulas from a 57% bagel to an 85% ciabatta.
Bake schedules you tick off
Country loaf, pan loaf and focaccia templates from autolyse through score-and-bake, each stage with its duration and a running total so you know when to start.
A bake archive that stays repeatable
Every loaf keeps the exact formula it was baked from, plus a star rating and crumb notes — and one tap bakes the same formula again with a fresh schedule.
Multiple cultures, all unlocked
Keep as many starters as you have jars, each with its own hydration, feeding history and rise baseline, and filter the bake history by which one you used.

Try it with sample data: Adds two cultures — Mabel at 100% and Rex at 80% — with ten feedings over two weeks (one fed four hours ago with a rise still running), and six bakes from a 68% einkorn blend to an 80% focaccia, five rated and one still in progress. You can start fresh at any time.

Questions
Is the web version of Levain free?+
Yes. Sign in with a free All Things AI account and use every screen — no subscription, no in-app purchases.
Where is my data stored?+
Only in this browser's local storage. Nothing you enter is sent to our servers, so we can't see it, back it up, or restore it. Clearing site data, a private window, or another device starts empty. Export a backup from the in-app menu to keep it.
Do I need an account?+
You can read about the app without one, but you must sign in to open it. Sign-in is free and takes a few seconds with Google.
How is the web version different from the Levain iPhone app?+
No crumb photographs: the iPhone app stores a photo with each bake, and here the loaf is described in notes instead. No stage reminders — the browser cannot wake you for the cold proof, so the schedule is a checklist you tick off rather than a set of notifications. The rise timer counts while the tab is open and picks the elapsed time back up from the feeding timestamp when you return, but nothing runs in the background.
